POTATO PUFFS




*Ingredients:


°3 cups mashed potatoes

°2 eggs

°1/3 cup sour cream (optional for serving)

°1 cup cheddar

°2 tablespoons Parmesan cheese

°2 tablespoons chives or parsley

°Salt & black pepper 


*Instructions:


1 - Preheat oven to 400 degrees F.

2 - Lightly grease with butter 8 - 9 wells of a non-stick muffin pan.

3 - In a medium mixing bowl, whisk in the eggs and stir in the cream. Stir in the two cheeses and chives. Add the potatoes and mix well.

4 - Pour them into the pan by filling the cups slightly under the top.

5 - Bake for 25-35 minutes until removed from the sides of the cup and browned. Remove from oven and let cool for 5 minutes in pan. Serve with sour cream if desired
